Description

Butternut Squash Curry! If you happen to love vegan curry, you then’ll need to save this straightforward curry recipe. Impressed by a few of my favourite Thai flavors; vegan and gluten-free. 


Elements

  • 2 tablespoons coconut or olive oil 
  • 2 giant shallots, peeled and chopped 
  • 2 garlic cloves, minced
  • 1 tablespoon recent grated ginger
  • Four cups diced butternut squash
  • 1 tablespoon soy sauce or tamari
  • Three tablespoons red curry paste 
  • ½ tablespoon yellow curry powder
  • half of teaspoon floor coriander
  • 1 cup canned coconut milk
  • 1 (15 ounce) can crushed hearth toasted tomatoes 
  • ¾ cup vegetable broth
  • 2 teaspoons recent lime juice, with zest from 1 lime
  • 2 teaspoons brown sugar
  • Three cups recent child spinach
  • Cooked rice, for serving 

Directions

  1. Warmth the oil in a big pot over medium-high warmth. Add the shallots and cook dinner for about 3-Four minutes, till barely softened. Add within the garlic, ginger and squash and cook dinner one other 5 minutes, stirring typically so to not burn.
